Sauce is a broad product category. A smooth vegetable purée, concentrated chilli sauce and an emulsion with pieces may require different pumping and thermal-process decisions. Define the actual recipe family and the conditions the equipment will encounter during production and cleaning.

Configuration priorities
What to specify for this duty.
01
Formulation changes the equipment duty
Describe solids, fibres, fat, starch and any pieces in the product. Include acidity and viscosity with measurement conditions. The heating profile and pump requirement depend on the formulation; the equipment review should include the most difficult recipe, not only a thin reference product.
02
Balance texture, heating and cleanability
State the quality target for consistency, colour and particle integrity. Ingredients can affect fouling, residue removal and changeover. Include the expected run length and the existing cleaning station so that cleaning access and return conditions form part of the specification.
03
Match the outlet to packaging
A downstream aseptic filler, tank or another packaging process establishes different interfaces. Specify the required outlet temperature and transfer pressure. A validated product process determines the treatment duty; product acidity alone should not be used to invent a time-temperature setting.
A useful first enquiry
Bring the product. We’ll discuss the equipment.
You do not need every value to start. Share what is known and identify what needs review. A clear product brief helps define configuration, included modules and the decisions that affect the quotation.
Recipe family, pH and ingredient categories
Viscosity and particle or fibre measurements
Nominal throughput and operating hours
Packaging method and required outlet condition
Practical answers
Before you specify.
Can it handle several sauce recipes?
A common system may be possible after reviewing the complete formulation range, operating envelope and changeover needs.
Does the equipment homogenize the sauce?
Homogenization is a separate function and is not automatically included. Identify any upstream homogenizer and the required product structure.
Discuss your equipment
From product requirements to a defined scope.
Send your product, target flow and packaging needs. The equipment quotation should identify what is included, what connects to your existing line and which process values still need confirmation.
Assess tube-in-tube sterilizer fit for food with pulp, fibres or pieces. Review particle passage, pumping, heat penetration, residence time and product integrity.
Define tube-in-tube sterilizer CIP and SIP scope, circuit coverage, cleaning return, instruments and aseptic interfaces before specifying the equipment package.
